This soup is super easy to make and believe me, it tastes delicious! All you need is some zucchinis, red peppers, onions and spices. It is full of beneficial nutrients and has lots of magnesium. Did you know that most of us are not getting enough magnesium in our diets? Here is a great opportunity for you to have a bowl of delicious soup that is packed with lots and lots of magnesium! Chop the vegetables to medium size. We will be blending everything together at the end, so you do not need to be too precise with the size of vegetables.
Fry the onions until golden. This is going to add a nice flavour to your soup. Make sure to keep an eye on the onions and stir them occasionally, so do they do not burn. Otherwise, you would have to start all over again, and who wants to do that! I am a pretty bad example of this because I do like to multitask. You would find me stirring the onions every now and then, and in between, I would be lost looking through the Instagram. Luckily, it takes a long-forgotten moment for the onions to burn. Add the chopped zucchini and fry it for few minutes with the onions. Zucchini is such a versatile summer vegetable. You can fry it, grill it or bake it into a bread, muffins or even a cake. When picking them up at the store or farmers market, remember that size matters. Large zucchini tend to be watery and flavourless. I always go for the smaller zucchini knowing, it will be more delicious. Also look for a vibrant, rich colour. If you are not planning to use up the zucchini that you buy straight away, look for zucchini that still have a good chunk of the stem attached, as those ones will last longer.
Add water, salt, black pepper, and blend everything with a hand blender until smooth. Not all hand blenders are created equal, and I would definitely avoid hand blender with a plastic end. By blending hot soup, the plastic will leak into your soup, making it not as healthy anymore. This zucchini and red pepper soup is super easy to make and it tastes delicious! All you need is just a few ingredients – zucchini, red pepper, onion, garlic, salt and black pepper.
- 2 1/2 lb of zucchini
- 2 red peppers
- 2 medium onions
- 2 garlic cloves
- oil for frying
- 4 cups of water
- salt and pepper to taste
- roasted pumpkin seeds (optional)
- Fry the onions until golden.
- Add the zucchini and fry for about 5 minutes.
- Add water and cook until tender.
- Add salt and pepper.
- Blend everything with a hand blender.
- On a separate pan, fry red pepper for about 5 minutes.
Topping: Add the roasted red peppers on top of the soup. They will complement the overall look, and make the soup taste extra delicious. For additional flavour and touch, pumpkin seeds do the magic! If you love cheese, you can top the soup with grated parmesan or mozzarella cheese.
